Project Proposal:


The junior class at Animas High School gets the opportunity to internship at a place that the student is interested in. I am very fortunate to be doing an internship at a popular restaurant in Durango Colorado, East by Southwest. I chose to do an internship here because I am interested in creating sushi, not only is it tasty, but artistic.

East by Southwest Restaurant is a very popular restaurant in our community, they focus on Asian cuisine and other culinary arts. East by Southwest have a variety of dishes to offer. They also provide a unique type of culture to the community. The owner of East by Southwest, Sergio Verduzco will be my mentor during my internship at this restaurant. Sergio will give me the opportunity to learn how the different dishes are made. I know that I will be doing a lot of prep work and design and make desserts. What I will offer the Restaurant are new ideas, I am creative and I love the culinary arts, I am very excited to be able to express myself in the dishes and develop new skills and apply them to my dishes.

By interning at East by Southwest, it is the very beginning of my culinary art career. I am very interested in many different types of art, I have made different types of art during my Junior year in my Digital Arts class. Before the class I was still interested in art but the most I had done was sketches or drawings. During digital arts I had explored in painting, I created a large drip painting replica, after painting I explored with cakes. I created a polka dot cake which I made from fondant (sugar and melted marshmallows). The way I see sushi and Asian cuisine is artistic, the beautiful colors from all the different foods combined in a small seaweed wrap. I know that these foods require a lot of creativity for the presentation of the dish, and that’s what I have to offer. I enjoy cooking and creating art, and sushi is the perfect combination of the both. I am very excited for this experience and am ready to work my hardest and do my best.

During my internship I will be designing a project that will benefit the restaurant. From what I will learn about sushi and Asian cuisine I will create my own original dish for East by Southwest. What I currently have in mind (can always be modified) is creating my own Sushi dish. At the moment I don’t have full knowledge of how to make sushi, or what tastes good or looks good but I hope to pick up those skills quickly. Another option for my dish project could be creating my own dessert. I do have more skill and knowledge on this subject because I have made Ice cream from scratch, cakes, pastries, pies, cookies, etc. My project will be determined when I have a better idea of what I am able to do with Sushi and desserts. Overall I am very excited to learn as much as a can about Asian cuisines and art. I am very fortunate to have the opportunity to work under a professional in this domain.

Hawaiian Princess Roll:

After I learned all the basic skill of how to make sushi, I took a week to create my own roll. My roll was named the Hawaiian Princess, the name actually has a lot to do with the roll. The ingredients of the roll are black forbidden rice, once It's cooked it becomes a purple color, the rice is unique to the name because in the past it was only to be eaten by kings and it was forbidden to anyone else, hence the 'Princess' in the name. I used White Walu tuna, papaya, and avocado for the interior. The Walu Tuna is native to Hawaii. The roll was then served with wasabi cured fish roe for color and sweet n' sour papay sauce.
